I started my days at Blue Apple Beach, a hidden oasis on Tierra Bomba Island. Eleven rooms, palm trees, a sparkling pool, and a sense of calm I didn’t realise I needed. The food is local, vibrant, and mindful, and the Green Apple Foundation—an ingenious initiative born from the island’s lack of waste management—turns discarded glass into art and trains local hospitality staff in sustainable practices. Sitting by the pool, listening to the waves, I realised that every detail here wasn’t just about luxury—it was about care. Back in the walled city, I checked into Townhouse, where each room is a little world unto itself, decorated with local art and infused with character. From the rooftop bar, I watched the sun dip behind terracotta rooftops, the city glowing in golden light, and thought about how few cities allow you to feel this intimate with them. Nearby, Amare celebrates indigenous culture and Caribbean flavours, while Lunático Experience had me kneading dough, tasting fresh ceviche, and laughing with chefs who shared not just recipes, but stories of their families and neighbourhoods.
