During Milan Fashion Week, Casadei decided to celebrate the launch of its new Spring/Summer 2025 collection with a cocktail party alongside its community. The event was named “Casadei Lovers,” a club dedicated to the new generation of trendsetters. These are the people who gathered on September 21st at the central Milan showroom, not only to celebrate the new collection but also to honor the creative spirit that has been at the heart of the brand for over sixty years. A concept dear to Vogue Italia, which is celebrating its own 60th anniversary during these days. w hen you eat at Michelin-starred Indian chef Rohit Ghai’s new restaurant Vatavaran in Knightsbridge, you can expect an “immersive” fine dining experience like no other.
It’s no coincidence that the name means “atmosphere” in Sanskrit – each of the restaurant’s four levels represents a distinct aspect of the Himalayan landscape, taking you on a journey that culminates at the “summit”. This multi-sensory experience, blending the natural world with the culinary odyssey, starts as soon as you enter the ground floor bar, with its calming palette of blue tones, floral wallpaper and artwork symbolising valley streams. The bright and airy mezzanine space is filled with natural light and the buzz of chefs at work in the open kitchen. As you ascend to the elegant first floor dining room, you find yourself surrounded by green and earthy tones, reminiscent of the forests found higher up the mountains. At the “peak” is an intimate lounge and cocktail bar, with deep red hues, velvet textures and a reflective ceiling mimicking the snow-capped Himalayas. For Rohit, who made his name with Kutir in Chelsea and the iconic Manthan in Mayfair, Vatavaran’s connection with the Himalayas is deeply personal. He and his long-term business partner Abhi Sangwan worked closely with Collective Design in Newcastle to bring their interiors vision to life. “The Himalayas have always been a source of inspiration,” says the chef who won a Michelin star in 2017 when he was executive chef at Mayfair’s Jamavar. “I have visited many times, and the tranquillity, the breathtaking landscapes and the culture all left a deep impression on me. We wanted to bring that serenity to Vatavaran.”
It comes as no surprise that the seasonal menu is also inspired by the mountains. Renowned for his modern take on traditional Indian flavours, Rohit has curated a culinary journey that captures the essence of the Himalayas through innovative techniques and seasonal ingredients. Identifying some of the rare and indigenous ingredients sourced from the region is like going on a treasure hunt. Himalayan juniper berries are used in marinades and cocktails for their earthy, citrusy aroma, fiddlehead ferns provide a slightly nutty flavour to dishes while the intensely aromatic mountain garlic adds depth. Then there’s buckwheat, a staple grain of the area, which is used in rotis and desserts, and Timur pepper, a rare Nepali pepper with a citrusy heat, perfect for enhancing savoury dishes.

Cocktails, designed by Abhi, also come with an Indian twist with authentic flavours such as gulab jamun (paired with spiced rum), jalebi infused with saffron and arak, and besan ladoo together with cardamom whisky, in the mix. We enjoyed the theatre of seeing the Nilima cocktail changing colour to purple with ingredients including vodka, mint, ginger and a butterfly pea flower-infused ice cube, which acts as a slow-release natural dye. Dining from the chef’s selection menu, we were encouraged to push the boat out (portions are small) and try most of the delectable dishes on offer, starting with prettily presented aloo tikki – crispy potato, tamarind and pomegranate - and goat shami kebab – a tasty combination of bakarkhani flat bread, roasted plum and black cardamom.
One of the highlights was the salmon tikka starter with kokum beetroot garlic, coconut and chutney. “Beetroot with salmon works because of the balance between the earthiness of the beetroot and the richness of the fish,” explains Rohit, whose reputation as a master of modern pan-Indian cuisine was cemented during his time at London’s legendary Gymkhana. For mains we tucked into mangalore fish with a delicious coconut and tamarind sauce and lamb barbat with burnt spices and garlic, all served with tadka dal and steamed rice. Our desserts were as delicious and unique as they sounded – a sous-vide pineapple and coconut dish with jaggery and chutney, and a deconstructed orange carrot cake with heritage carrots and cashews. If you’re feeling more adventurous, opt for garlic almond cannoli with pistachio mawa and mixed berries. We also enjoyed a surprisingly light and fruity Thelema chardonnay from South Africa.

Signature offerings include robata-grilled wild tiger prawns with chickpea and coconut, balchao guinea fowl paired with smoked beetroot, and a slow-cooked lamb shank biryani. Other highlights are Amritsari kulche and choley, as well as a whole rotisserie masala chicken with burnt spices and bone marrow sauce, which Rohit describes as a “full- flavoured showstopper”.
Here, Punjab-born Rohit reveals what led him to become a chef and why pushing culinary boundaries are so important to him.
You’ve had huge success with your other two London restaurants. Why did you decide to launch Vatavaran now and how is it different from the others?
“Vatavaran is a project that has been in the making for a while, and the time felt right to introduce something truly unique to London’s fine dining scene. We wanted to take our guests on a new journey, inspired by the serene yet rugged landscapes of the Himalayas. While Kutir celebrates the wilderness, and Manthan focuses on coastal influences, Vatavaran is an entirely different experience – it’s about atmosphere, elevation, and the rare, indigenous ingredients that define Himalayan cuisine. Every detail, from the menu to the interiors, is curated to transport diners to this extraordinary region, while still integrating traditional dishes and ingredients from the whole country.”
How would you describe Vatavaran’s cuisine and influences?
“Vatavaran is deeply influenced by the diverse landscapes and ingredients of the Himalayas, blended with modern techniques and a pan-Indian approach. It takes inspiration from the high-altitude cooking traditions, combining rustic, bold flavours with refined culinary execution. We use ingredients such as Himalayan juniper berries, fiddlehead ferns and mountain garlic, which bring a unique depth to the flavours. While rooted in Indian heritage, the menu incorporates unexpected elements, resulting in a dining experience that is both familiar and innovative.”
Is the menu also inspired by your native Punjab?
“My Punjabi heritage is reflected through comforting, bold dishes that pay homage to my roots. For example, Amritsari kulche with choley is a nod to the street food culture of Punjab, while the slow-cooked lamb shank biryani carries the slow-simmering techniques that I grew up with.”
Has food - and the preparation of it - always been a big part of your life?
“Food has always been at the heart of my life. Growing up in Punjab, our meals were full of robust flavours and rich traditions. I remember my mother making sarson ka saag with makke ki roti in the winter, a dish that still brings me comfort today. Dal chawal with homemade pickle and papad was another staple that holds special memories. Cooking was never just about sustenance; it was about gathering, sharing and passing down traditions. That deep-rooted connection is what led me to become a chef.”

There are some unusual pairings such as garlic almond cannoli with pistachio mawa and mixed berries. Can you describe the creative process? “We want to surprise and delight our guests but always in a way that honours the essence of Indian cuisine. The creative process starts with an exploration of local and seasonal ingredients and finding ways to integrate them with traditional Indian techniques. The garlic almond cannoli is a play on textures and flavours, bringing together sweet, savoury and nutty elements in an unexpected way. It’s about pushing boundaries while maintaining harmony on the plate.”
You won a Michelin star for Jamavar in Mayfair in record time - just ten months after it opened. What did that award mean to you? “Winning a Michelin star was never the primary goal – I was just doing what I love, cooking from the heart. But of course, it was an incredible honour and a proud moment. More than anything, it reinforced the importance of putting Indian cuisine on the global fine dining map. It also showed that Indian chefs could stand alongside the best in the world and innovate while staying true to our roots.”
How would you describe the current dining scene in London?
What is your own go-to dish on the menu?
“London’s dining scene is at its most exciting. Luxury dining is evolving and the love for Indian cuisine continues to grow and diversify. Diners are more discerning than ever, looking for authentic yet innovative experiences. It’s a great time to be a chef here, as people are willing to explore bold flavours and unique concepts.”
“My go-to dish would have to be the slow- cooked lamb shank biryani – it embodies everything I love about Indian cuisine: slow cooking, rich spices and deep flavour. As for signature dishes, the robata-grilled wild tiger prawns, imli chicken and desserts like the sous- vide pineapple and coconut with jaggery chutney have really resonated with guests.”

Open to both hotel guests and London residents, the bakery will honor traditional British delicacies with a modern twist. Richard Hart is the founder of Copenhagen’s Hart Bageri, acclaimed as one of the world’s best bakeries, which he opened in partnership with René Redzepi of Noma. He was previously head baker at the legendary Tartine in San Francisco. Originally from London, England, he currently lives in Mexico City, where he is opening his newest project, Green Rhino. He is the author of Richard Hart Bread: Intuitive Sourdough Baking, published in the United Kingdom in January 2025 via Hardie Grant Books.

HvH Arts is dedicated to empowering the next generation of young creatives by providing a gateway to the arts. Our free and inclusive programs are designed to eliminate financial and social barriers, inspiring children and young people to explore their creativity, develop their artistic passions, and pursue careers in the arts. Supporting young creatives is essential to fostering the future of the arts. In honour of our late, esteemed patron Helen McCrory OBE, we proudly present The McCrory Award, an initiative providing bursary funding, resources, and one-on-one mentoring to young people who need support to advance their artistic careers.

What creative programs and workshops do you currently offer young people?
At HvH Arts, we offer diverse creative programs and workshops for young people aged 5 to 21. Our sessions are led by professionals who provide high-quality training in various disciplines, including: Photography, Filmmaking, Music and Music Production, Fashion Design, Fine Art Illustration, Animation, Sculpture , Drama. One of our flagship programs, The Music Mentoring Project, has been thriving for over four years. It has successfully supported participants aged 14 to 19 in creating a music documentary and releasing their EP, The Crimson. Listen to The Crimson here.
How can young people get involved with HVH Arts, and are there any requirements for joining?
We welcome all young people aged 5 to 21 to join our creative programs. While there are no specific requirements to join, priority is given to those from low-income families to ensure they have access to our free programs, supporting their artistic journeys in the arts and media. Do you collaborate with professional artists or organizations to provide mentorship opportunities?
Absolutely! HvH Arts is proud to collaborate with esteemed artists and organisations to offer mentorship opportunities. We are fortunate to have the support of our patron , Damian Lewis, along with our board of ambassadors: Sadie Frost, Freddie Fox, Robert Mountford, Violetta, Sam Sure, Lo Lauren, Stella McCartney, and Marcella Martinelli. They actively support our young participants through masterclass workshops in acting, drama, film, music, fashion, and mentorship. We also partner with organisations like COMPANY3, which supports our work by providing young people with opportunities within the film industry, including editing two of our short films. Additionally, we are supported by the National Portrait Gallery and the V&A, which offer free workshops, curator talks, and exhibition access. Our exclusive event, The McCrory Award, receives generous support from Alon Zakaim Fine Art, providing bursaries, resources, and access to specialized arts workshops.

What are some success stories of young artists who have benefited from HVH Arts?
The impact of HvH Arts on young creatives has been remarkable. One standout success story is Giada, a talented young person with the incredible opportunity to work with fashion stylist Marcella Martinelli. This experience has significantly boosted her confidence, and she is now flourishing as an emerging fashion stylist. Another inspiring example is Danny, a young drama student who participated in masterclass acting workshops with Freddie Fox and Robert Mountford, receiving mentorship in theatre acting and scriptwriting. His dedication and talent earned him a place at The Brit School last year. Our patron, Damian Lewis, actively supports our work through his time and invaluable advice to our CEO, Debbi Clark. His support has played a key role in helping HvH Arts reach over 1,024 unique children and young people over the past year. HvH Arts is always looking for volunteers and support in fundraising. What makes this venture even more exciting is Calim’s collaboration with artist Domingo Zapata. Domingo’s work is bold, electric, and constantly pushing boundaries—mixing oil, acrylics, collage, and even graffiti. As the only living artist to have his Torero Mona Lisa displayed at the Louvre alongside Da Vinci’s, Domingo’s style is anything but conventional. His art also graced the largest vinyl mural in New York City’s history on the façade of One Times Square in 2019. Together, Calim and Domingo are creating one-of-a-kind pieces that blend artistry and watchmaking, transforming bold ideas into stunning works of craftsmanship.
On top of all of this, Calim’s love for motorsport is another defining aspect of his life. Architecture and nature are opposites in some ways, one is structured, the other organic but when they meet, something special happens. The SLIT Collection, which marks our 10th anniversary, plays with this balance. The designs have sharp, architectural cuts softened by fluid movement. Slits create openness and flexibility, reflecting both modern urban spaces and the effortless flow of nature. Every piece is designed to move with the body, layered, restyled, and reimagined. TO commemorate The Lady Garden Foundation’s tenth anniversary, Anouska Beckwith has embraced the heartfelt role of Creative Director to create something truly special: a limited-edition 2025 calendar captured through the lens of Lily Bertrand-Webb. We had the privilege of speaking with Anouska and Tamara Beckwith about their profoundly personal mission with The Lady Garden Foundation, a cause that has become a beacon of hope and empowerment over the past decade. For Anouska, this journey is incredibly close to her heart. It is dedicated to the memory of her cherished grandmother, Paula Beckwith, who valiantly battled gynaecological cancer. Their vision for The Lady Garden Foundation is beautifully simple yet profoundly powerful: to raise awareness, encourage open conversations, and empower women to take control of their health without fear or stigma. They want to create a world where every woman feels seen, heard, and supported, where women of all ages are educated about their bodies and emboldened to advocate for their well-being. As Anouska and Tamara reflect on the foundation’s journey, their passion for the cause is evident. They speak not only as founders but also as women striving to create a lasting impact. Through initiatives like the limited-edition 2025 calendar, they aim to continue dismantling barriers, celebrating resilience, and inspiring women everywhere to value their bodies and voices. As Gloria Steinem eloquently stated, “Don’t think about making women fit the world— think about making the world fit women.” The Lady Garden Foundation is not just a charity; it’s a movement, a nurturing space built by women, for women, with love, hope, and unwavering dedication. With the 2025 calendar celebrating Women of Talent, what message do you wish to convey to supporters and the community? This calendar was conceived in honour of Lady Garden's 10th anniversary, a milestone reflecting our commitment to women’s empowerment and our desire to inspire across generations. With this in mind, we have carefully curated a calendar that resonates with women of all ages. Whether it’s the admiration of a particular Woman of the Month, a reflection on the moon’s cycles, or the wisdom imparted through quotes from remarkable figures such as Rosa Parks and Dolly Parton, every detail has been infused with love and intention. We hope that this care is palpable for all who welcome it into their homes. As Malala Yousafzai so beautifully expressed, “I think realising that you’re not alone, that you are standing with millions of your sisters around the world is vital.” In the face of the pain and strife that so many are enduring today, we found it essential to feature powerful women like Ama Pipi, Noor Fares, and Charlotte Dellal—each of whom has contributed to creating beauty, unity, and resilience. By standing together, we are an unstoppable force.

What motivated you to found the Lady Garden Foundation, and in what ways did your personal experience influence its mission?
Honestly, I would never have imagined in my wildest dreams that we would establish a Foundation in memory of my late mother. Yet, as life has a peculiar way of presenting opportunities, another co-founder, Mika Simmons, who had also lost her beloved mother to gynae cancer, approached my sister and me a few years after our mother’s passing in 2011. It felt like a meaningful way to make sense of the horror we found ourselves in. We had no clear idea of what we hoped to achieve. Still, we were determined that it would be more than simply raising money for The Royal Marsden, especially for our wonderful doctor, Professor Susanna Banerjee. It was a stark reminder that Britain shamefully lagged behind America, Italy, and several other countries in the detection of the five gynae cancers. Raising awareness became our mission. Reflecting on the foundation’s journey, what have been some of its most rewarding moments or milestones? Having just celebrated our 10th anniversary, I believe we are incredibly proud of all our achievements. We are still battling on. Our doctors, especially John Butler, are truly Earth Angels,and when he introduces us to one of his remarkable patients, you feel very humbled. Obtaining research results that we have funded brings a huge moment of joy, but meeting survivors or those in treatment makes the entire process much more tangible and, more crucially, spurs us on to make a difference.
The number of women who reach out to tell us how we have helped them, in both small and significant ways, is yet another small means of alleviating our own Mother’s death, making it slightly less painful. We firmly believe in breaking taboos; most women don't actually refer to their lady garden as a vagina. We are now firmly dedicated to the belief that education is essential. We have grand plans and have no intention of calling it a day!
